I am making a stew/soup, what veggies?

i plan to cook some stew meat in beef broth w/onions and garlic, and then add a sauce like el pato (enchilada) so the meat has flavor and the consistency of chili colorado. should i add veggies(maybe hominy) or just serve it with tortillas and rice/beans. any spices or whatever i should add?
